These cashew candies are so good and so easy to make that you will want to make them every day. The best part is that they are so versatile that you can make them with any flavor you wish. You just make the base and then add your favorite fruits and flavors. I made this batch with fresh strawberries and the result was simply amazing. Make sure you make a bigger batch if you share them.
- 1 cup of soaked cashews
- 1 cup of fresh strawberries
- 3 Tbsp of maple syrup (or your favorite sweetener)
- ½ cup of coconut oil
- 1 tsp vanilla extract
Soak the cashew overnight or for at least 3 hours. Add all the ingredients in the blender and blend until everything is well combined and you get a super smooth composition. Pour the mixture into silicone molds or ice trays. Place in the freezer for at least 2 hours. Done.
