Coconut energy bars

Hectic days require lots of energy and so do intense workouts and long study sessions. I like to tackle these days with the right food and enough sleep so I don’t let them catch me off guard. This time, for example, I made a big batch of coconut energy bars and kept a bar close at all times. They are easy to make as you will see and they are full of energy boosting superfoods. All of the superfoods I have used have great benefits for your health, are nutrient packed, they help digestion and they provide you with tons of energy. Ingredients:   20 hydrated dates (save the water) 1 cup of almonds 1 cup of walnuts 2 Tbsp hemp seeds 1 cup coconut flakes ½ cup rolled oats Water saved from the dates How to:   Hydrate the dates for at least half an hour and save the water, as we will use it. Place the dates with all the other dry ingredients in the S blade food processor and process until everything is well combined. Gradually add the water until you have a sticky composition. The moment when the love for healthy food meets the love for Snickers and you get such an amazing cake, that is the moment when you know that life is good. This raw vegan Snickers cake is every chocolate and peanut butter lover’s dream come true. We have peanut butter; we have a generous layer of caramel and a topping of chocolate and salted peanuts. This cake is rather easy to do; you just need some patience to make all the different layers and the patience to leave it in the freezer to set before adding a new layer. Let’s see now how you can make this amazing cake and surprise yourself and your loved ones. These cashew candies are so good and so easy to make that you will want to make them every day. The best part is that they are so versatile that you can make them with any flavor you wish. You just make the base and then add your favorite fruits and flavors. I made this batch with fresh strawberries and the result was simply amazing. Make sure you make a bigger batch if you share them. Ingredients: 1 cup of soaked cashews 1 cup of fresh strawberries 3 Tbsp of maple syrup (or your favorite sweetener) ½ cup of coconut oil 1 tsp vanilla extract How to: Soak the cashew overnight or for at least 3 hours. Add all the ingredients in the blender and blend until everything is well combined and you get a super smooth composition. Pour the mixture into silicone molds or ice trays. Place in the freezer for at least 2 hours. Done.

Raw Vegan Raspberry Tarts

These raw vegan raspberry tarts are the perfect choice when you have a dinner party or for the Sunday brunch. They are easy to make, they look pretty fancy and they are delicious. You can use any berry you like, either fresh or frozen and you can make a bigger batch and keep them in the freezer for weeks. Multiple Sunday brunches, you know? J. Ingredients: For the crust: 100gr walnuts 10 pitted dates 1 Tbsp of water 2 Tbsp coconut flakes For the filling: 200gr cashew 200gr frozen raspberries 4 Tbsp coconut oil 1/2 vanilla bean 2 Tbsp maple syrup ½ cup of filtered water How to: I have covered each of the tart trays with plastic wrap and then I put in the crust, by arranging it with my fingers. For the crust of the cake I have mixed the walnuts, dates and coconut flakes in the S shape blade food processor. After all the ingredients were mixed together, I have added also the table spoon of water, which made the composition a bit sticky. Breakfast is the most important meal of the day and, in my case, my favorite meal of the day. Homemade granola is an excellent healthy choice when it comes to breakfast. Mix it with yogurt, milk, fresh or frozen fruits, orange juice… you name it. Is so versatile that you can combine it with so many other excellent healthy foods. These raw vegan brownies are by far my favorite raw vegan dessert. I like them better that all the cakes, the energy bars, candies and chocolate and all the other raw desserts. These brownies are like a new love affair, they come all chocolaty and crunchy to seduce you without giving you a chance and leaving you wanting for more. If you are a chocolate lover (as you probably are), these brownies are for you. For too many people, the idea of eating healthy is somewhat similar with eating exclusively steamed veggies and broccoli with every meal. They imagine giving up chocolate and any other sweets forever, forgetting they ever had a burger or a pizza and getting frustrated that they will never eat good, delicious food ever again.
