Easy Carrot Salad

  • 4 large carrots
  • 2 tbsp hemp seeds
  • 2 tbsp sunflower seeds
  • 1 spring onion
  • dressing: 2 tbsp dijon mustard, 1 tbsp maple syrup (or honey), 2 tbsp balsamic vinegar, 2 tbsp olive oil
  • fresh black pepper
  1. - thinly slice the carrots or use a spiralyzer to turn them into carrot noodles.
  2. - add the seeds, the onions and the dressing.
  3. - in order to make the dressing, mix all the wet ingredients together until they combine in a soft paste.
